Making Kombucha Tea
If you are interested in making your own Kombucha tea, you will be happy to know the process is quite simple. All you need is: a suitable brewing container, a piece of muslin or kitchen towel, a large elastic band, a thermometer, 4 liters plus a glass of water, tea, 320g refined white sugar, a healthy Kombucha culture, 400 ml ready brewed Kombucha, suitable bottles, and a kitchen measuring jug.
To begin, you will make your nutrient solution, and this is the liquid that feeds the culture and which is turned into the finished product. First, you take approximately 1 liter of water, bring it to a boil in a kettle, then add the sugar and tea, stirring until all the sugar dissolves, than let it steep for about 15 minutes.
Next, you add the other 3 liters of water, and the extra glass of cool water into your brewing mixture. Wait 15 minutes, then strain out the loose tea and add the sweet tea to the rest of the water in the brewing container. Once your beverage is at the right temperature, add the culture to the liquid, and then add the 400 ml of finished Kombucha. Cover the top of the container with your muslin or kitchen towel, and use the elastic band to hold it in place.
Make sure that you put the container in a suitable location, where it will be left undisturbed and where the temperature is appropriate. It should be at a constant temperature of about 20-30°C, away from tobacco smoke and other strong smells. Approximately one week later the mixture will be complete, but taste it first to make sure that it is ready. If it is not quite ready, put the cover back on and leave it for another day or so before testing it again.
